Easy Chicken Salad with almond flakes sesame dressing


  • Mixed salad leaves
  • 2 tablespoons of toasted almond flakes
  • Cherry tomatoes 
  • 2 organic chicken thigh fillets

Marinade for chicken fillets:

  • 1 tablespoon of fresh lemon juice 
  • 1 tablespoon of gluten free soy sauce
  • 1 teaspoon of sesame oil
  • 1 clove of garlic, minced 
  • Black pepper

Sesame dressing:

  • 1 tablespoon of organic tahini
  • 1 teaspoon of sesame oil
  • Honey (to taste)
  • 1 teaspoon of gluten free soy sauce
  • 1 tablespoon of boiling water (to dilute paste so it looks more like a dressing)


  1. Preheat oven to 220c.
  2. Combine lemon juice, garlic, soy and sesame oil, add fixed chicken fillets to marinade and let the mixture sit for 20mins. Bake the diced chicken fillets until cooked.
  3. Toast almond flakes on a hot pan until slightly coloured
  4. Combine the chicken, salad leaves and cherry tomatoes. Drizzle the sesame dressing and sprinkle the almond flakes over salad.
